Buffalo Tuna Spring Rolls

A little spring cleaning in the pantry yielded a forgotten package of Starkist Buffalo flavored tuna and some spring roll rice wrappers.
At first, I didn’t think the two items would taste good together but the more I thought of it the more I liked the idea of odd items made into one yummy meal.
With tuna and spring roll wrappers in hand, here is what I came up with…

Buffalo Tuna Spring Rolls
- 1 envelope of Starkist Buffalo flavored tuna
- 2-3 Spring roll rice wrappers
- 1/8 Orange Pepper
- 1 Green onion (sliced)
- 1 Carrot (shredded)
- 1 Stalk Celery (diced)
- 1/4 Avocado
- 1 Stalk of kale
Buffalo Ranch Dipping Sauce
- 1/4 cup Ranch dressing (any type of ranch or blue cheese dressing will work)
- 1/8 cup Franks Red Hot sauce
Instructions:
To start, soak your spring roll rice wrappers for about 15 seconds in warm water so they are pliable. Place on a surface and layer with the tuna first, followed by the remainder of the ingredients in any given order. Roll like a burrito and close.
In a separate bowl, mix ranch dressing and Franks Red Hot sauce for dipping.
This recipe will make 2-3 spring rolls depending on the size of your wrappers and the thickness you choose to make them. Refrigerate any leftovers.

I really liked the flavor of the Buffalo tuna and Buffalo Ranch dipping sauce, they paired well with all those fresh vegetables.

Lunch was a delight.
